There’s no yogurt in these super flavourful blueberry popsicles!
Every year, I wait for summer’s return like a kid waiting for Santa Claus. I just feel better, more myself, in these longer days…to the point where I’m pretty sure that I need sunlight and warmth to thrive as much as the fig tree in my back yard.
And eating alllll the sweet, juicy, beautiful fruit in alllll of the ways is part of this joyful, abundant season for me. These super flavourful, ridiculously easy to make – just blend and pour – blueberry popsicles are a love letter to summer berries and perfect for keeping in the freezer whenever a craving strikes.
I eat a LOT of blueberries – in the summer, I tend to alternate between these popsicles and my creamy blueberry yogurt clusters as a cold snack – because as a dietitian, I know that in addition to being delicious, blueberries are so, so good for you! They’re loaded with antioxidant flavonoids for liver and gut health plus easy-on-the-tummy fibre, about 4 grams per cup (yep, they’re low FODMAP!).

How to make the best blueberry popsicles ever
Blueberries are so delicious that you might be tempted to just throw some into a blender and make 1 ingredient popsicles but let me – and my decade of experience developing recipes and 3 plant-based cookbooks – share a couple of reasons why you want to add just a wee bit more for the best possible flavour.
You can make these dairy free popsicles with fresh or frozen berries…so enjoy this recipe year-round when you need a hit of summer on your tongue!
The first trick is to add a wee bit of lemon juice…because blueberries on their own can taste a bit flat and the acid from the lemon brightens and intensifies their flavour.
The second? A wee bit of maple syrup, which deepens and enhances the blueberry flavour because A) blueberries aren’t as sweet as you think and B) when frozen, everything is a little less flavourful and the tiny bit of sugar helps.
And my final petition to the flavour jury is to add basil. It might seem a bit weird because we associate basil with savoury dishes but you get this beautiful, aromatic hint of basil that simply enhances the blueberry-ness of it all and makes these pops taste like summer on a stick.Even my kids eat these with the basil…and they side eye every weird food move I make. Still nervous? Try just 2 tbsp of basil and work your way up.

Super Flavourful Blueberry Blender Popsicles
So easy, so packed with blueberry flavour! Blend up these nourishing blueberry popsicles – with an optional hint of fresh basil – in minutes for a craveable frozen treat.
4cupsblueberriesfresh or frozen (recommend thawing for 10 minutes!)
2tablespoonsmaple syrupor agave
1tablespoonfreshly squeezed lemon juice
Optional…but highly recommended
⅓cupfresh basil leavesuse less if skeptical!

Instructions
Place the blueberries, maple syrup, lemon juice and basil, if using, to the blender.
Blend on low, and slowly increase to medium low, then medium and then high, as blueberries liquify. If you’re using fresh berries, they blend easily!
If using frozen berries, take your time increasing the speed, it might take a full two minutes to get to high and you might need to scrape once or twice in the beginning. Really struggling to blend? Use 1-2 tbsp of water (no more than that!)
Pour into popsicle molds, add sticks and freeze until solid, at least 6-8 hours. Fresh berries gel very quickly, like a jam, due to their soluble fibre, so pour slowly and maybe with a spatula to help control the flow!

Fun idea: you can also freeze these in ice cube trays as starters for smoothies or frozen drinks!
